Our Iberian Pork Collar Loin is a selected whole piece, ideal for knife slicing and enjoying its full juiciness. This cured meat, also known as Cabecero de Lomo, is obtained from the upper part of the Iberian pig's loin and is highly valued for its exceptional intramuscular fat infiltration.
Produced following the artisanal method, the piece is seasoned with paprika, garlic, and natural spices, and undergoes a process of slow and controlled curing in natural drying rooms. The result is a delicacy with an intense red colour and smooth texture, perfect to be tasted in thin slices.
