The Patatera Sausage is a speciality of Extremaduran gastronomy, unique in its composition. Unlike other blood sausages (morcillas), it contains no blood, instead using a base of cooked potato (around 60-70%) mixed with noble pork fat.
This combination, along with the seasoning of La Vera Paprika (which gives it its characteristic colour and aroma) and garlic, results in a sausage with a soft, creamy texture. It is a highly versatile product: it can be consumed cold, spread on bread or toast, or hot, as an ingredient in stews or simply fried.
The Morcilla Patatera is presented as a whole cured piece.
