Acorn-Fed Ham 100% Iberian Breed (Pata Negra): The Jewel of the Dehesa
The Acorn-Fed Ham 100% Iberian Pata Negra is the most exquisite piece and the jewel of our drying facility. It comes from 100% Pure Iberian Breed pigs, resulting from the exclusive cross between a 100% Iberian mother and a 100% Iberian father.
These animals are raised in total freedom on our pastureland (dehesa) and rigorously fed on acorns and grasses during the Montanera season. This diet and constant exercise ensure great fat infiltration, which is evident in the elegant marbling and its cherry red color.
The curing of this piece is carried out in an artisan and natural way in our drying rooms, lasting from 36 to 54 months. This prolonged process culminates in an intense, long-lasting flavour and a texture that melts in the mouth, offering the supreme Iberian ham experience.
